Pineapple Coconut Sourdough Pancakes

Transport yourself to the tropics with these pineapple coconut pancakes made from sourdough discard. Light, fluffy, and bursting with island vibes, they make the perfect summer breakfast or brunch treat.

Ingredients:

  • 1/2 cup sourdough discard

  • 1/2 cup flour

  • 1 tsp baking powder

  • 1 tbsp sugar

  • 1 egg

  • 3/4 cup milk

  • 2 tbsp melted coconut oil or butter

  • 1/2 tsp pineapple concentrate

  • 1/2 tsp coconut concentrate

  • Optional: shredded coconut or crushed pineapple

Instructions:

  1. In a bowl, mix flour, baking powder, and sugar.

  2. In another bowl, whisk discard, egg, milk, coconut oil, and flavor concentrates.

  3. Combine the wet and dry ingredients. Let rest 5 minutes.

  4. Cook on a hot greased skillet until bubbles form. Flip and cook until golden.

  5. Serve with maple syrup, fresh pineapple, and a sprinkle of coconut.
