Coconut Lime Sourdough Bars

These zingy, tropical sourdough bars are like lemon bars’ cool cousin. Coconut and lime give them a summery twist that makes them ideal for BBQs, potlucks, or a chilled dessert at home.

Crust Ingredients:

  • 1 cup flour

  • 1/4 cup powdered sugar

  • 1/2 cup cold butter, cubed

Filling Ingredients:

  • 3/4 cup sugar

  • 2 tbsp flour

  • 2 eggs

  • 1/2 cup sourdough discard

  • 1/2 tsp lime concentrate

  • 1/2 tsp coconut concentrate

Instructions:

  1. Preheat oven to 350°F. Mix crust ingredients and press into 8x8 pan.

  2. Bake crust for 15 minutes.

  3. Whisk filling ingredients together. Pour over warm crust.

  4. Bake another 20–25 minutes.

  5. Cool, then dust with powdered sugar and chill.
