Ingredients (12 muffins)

Dry Ingredients

  • 2 cups all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • ¼ tsp black pepper

Wet Ingredients

  • 2 large eggs (room temperature)

  • ¾ cup whole milk or buttermilk

  • ⅓ cup melted butter (cooled)

  • 2 tbsp sugar (just enough to balance the bacon)

  • ½ tsp Butter flavour concentrate

  • ¼ tsp Bacon flavour concentrate (optional but excellent for consistency)

Add-ins

  • 1 cup cooked bacon, finely chopped

  • ½ cup shredded sharp cheddar (optional but recommended)


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin or lightly grease.

  2. In a bowl, whisk together flour, baking powder, salt, and pepper.

  3. In another bowl, whisk eggs, milk, melted butter, sugar, and flavour concentrates.

  4. Gently fold wet ingredients into dry until just combined.

  5. Fold in bacon (and cheddar if using).

  6. Divide batter evenly into muffin cups.

  7. Bake 18–22 minutes, until golden and a toothpick comes out clean.

  8. Cool completely before topping.


🧀 Maple Cream Cheese Buttercream Topping

Ingredients

  • 8 oz cream cheese, softened

  • 4 tbsp unsalted butter, softened

  • ¾–1 cup powdered sugar (to taste)

  • ½ tsp Maple flavour concentrate

  • ¼ tsp Vanilla flavour concentrate

  • Pinch of salt

Instructions

  1. Beat cream cheese and butter until smooth.

  2. Add powdered sugar gradually.

  3. Mix in flavour concentrates and salt.

  4. Chill 15 minutes for a firmer spread or pipe immediately.


🍁 Optional Finishing Touch

  • Sprinkle with extra crispy bacon bits

  • Drizzle lightly with real maple syrup
