Peach Vanilla Sourdough Discard Scones

Scones are a wonderful way to use up sourdough discard, and these peach vanilla beauties are perfect for summer. Delicately sweet and tender, they pair perfectly with iced tea or cold brew.

Ingredients:

  • 1 cup sourdough discard

  • 2 cups flour

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 6 tbsp cold butter, cubed

  • 1 tsp peach concentrate

  • 1/2 tsp vanilla concentrate

  • 1/2 cup diced fresh or canned peaches

Instructions:

  1. Preheat oven to 400°F.

  2. Cut butter into dry ingredients until crumbly.

  3. Mix discard and flavor concentrates into dough.

  4. Fold in peaches. Shape into a circle on a floured surface.

  5. Cut into 8 wedges and place on baking sheet.

  6. Bake for 18–20 minutes or until lightly browned.
