Cotton Candy Ice Cream Recipe

Ingredients:
For the Cotton Candy Swirl:
- 1 cup granulated sugar
- 1/4 cup water
- 1/4 teaspoon cotton candy flavouring extract (adjust to taste)
- A few drops of pink food coloring (optional)
For the Ice Cream Base:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- Pinch of salt
- 1 teaspoon vanilla extract
Instructions:
Cotton Candy Swirl:

In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring gently until the sugar is completely dissolved.

Once the sugar is dissolved, stop stirring and allow the mixture to come to a boil. Use a candy thermometer to monitor the temperature. Let it cook until the mixture reaches 320°F (160°C), without stirring.

Once the mixture reaches the desired temperature, remove it from the heat immediately to prevent burning. Let it cool down slightly for a minute or two.

Carefully stir in the cotton candy flavoring extract. If you want a pink color, add a few drops of pink food coloring and stir well. Be cautious as the mixture may release steam.

Transfer the cotton candy syrup to a heatproof container and let it cool completely. Once cooled, place it in the refrigerator to chill while you prepare the ice cream base.
Ice Cream Base:

In a mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, salt, and vanilla extract until the sugar is fully dissolved.

Pour the ice cream base into your ice cream maker and churn according to the manufacturer's instructions. Churning usually takes about 20-25 minutes or until the mixture reaches a soft-serve consistency.
Assembly:

Once the ice cream base has reached the desired consistency, drizzle about a third of the chilled cotton candy syrup onto the churned ice cream.

Using a spatula, gently fold the cotton candy syrup into the ice cream to create swirls. Do not overmix to maintain the swirl effect.

Transfer the cotton candy swirl ice cream into a lidded freezer-safe container, layering it with more drizzles of cotton candy syrup as you go. Save some syrup for topping.

Smooth the top of the ice cream, and then drizzle a little more cotton candy syrup over the surface.

Place the container in the freezer and let the ice cream harden for at least 4 hours or until it's firm.
Serving:
- Scoop the cotton candy swirl ice cream into bowls or cones.
- Drizzle additional cotton candy syrup on top for an extra burst of flavor and color.
